Easy Crock Pot Pumpkin Coffee Cake

Ingredients:

  • Betty Crocker Cinnamon Struesel Bread Mix

  • 1 cup Pumpkin Puree

  • ⅛ cup Sugar

  • 1 tsp Pumpkin Spice


Directions:


  1. Set your slow cooker to HIGH and spray with non-stick cooking spray.

  2. Mix together pumpkin puree, sugar and pumpkin spice.

  3. Add in bread mix and stir until combined.

  4. Pour batter into slow cooker and top with struessel pouch.

  5. Add crock pot lid and cook for 60-75 minutes until toothpick inserted in the middle of the cake comes out clean.


Slow Cooker Chicken Tortilla Soup

Ingredients:

  • 4 boneless, skinless chicken thighs

  • 2 15 oz cans diced tomatoes, undrained

  • 2 cans (8 oz total) diced, mild green chiles, drained

  • 1 c chicken broth

  • 1 onion, diced

  • 2 tsp garlic powder or 2 cloves garlic, diced

  • 1 tsp ground cumin

  • salt and pepper to taste

  • 1 pkg tortilla strips or chips to garnish

  • chopped cilantro

  • shredded Monterey Jack cheese

  • sliced avocado

  • lime wedges

Directions:


  1. Place chicken in slow cooker.

  2. Combine tomatoes, chiles, chicken broth, onion, garlic and cumin in small bowl.

  3. Pour mixture over chicken.

  4. Cook on low 6-7 hours or high 3-4 hours.

  5. Remove chicken and shred with two forks. Return chicken to slow cooker.

  6. Serve, topping with tortilla strips, cilantro, cheese, avocado and a squeeze of lime.
